I really enjoy this egg salad recipe. It’s great plain or served in a raw bell pepper half.
- 8 hard-boiled eggs, chopped
- 1/4 c spicy mustard
- 1/2 c mayonnaise
- stevia equivalent to 1 T sugar
- 1/2 t garlic salt
- 1/2 c finely chopped onion
- In a medium bowl, combine mustard, mayonnaise, stevia, and garlic salt.
- Fold eggs and onion into mayonnaise mixture. Cover and refrigerate. This recipe tastes best when the flavors have been allowed to blend for at least 4 hours.
