Today’s Menu (11/06/11)

I was in such a hurry to get around for church this morning that I only took my weight stat for my blog post.  (I didn’t check BP or blood glucose before I ate, but it turned out I rushed for no reason.  I forgot to set my clock back an hour last night! A lot of us Hoosiers are going to take a while to get used to that!)

Anyway, I was so stunned about my weight that I took it twice.  It’s hard to believe that eating all this food SEEMS to be the ticket for me.

Breakfast:

  • a medium red onion and 3 eggs scrambled in coconut oil

Lunch:

  • 2 grilled chicken thighs
  • steamed Brussels sprouts w/butter

Dinner:

  • 2 grilled chicken thighs
  • mashed cauliflower with cream cheese and ghee

According to Fitday:

  • Calories: 2090
  • Fat: 155g (66%)
  • Carbs: 59.4g (10%)
  • Fiber: 24.8g
  • Protein: 128g (24%)

Some vitals from this morning:

  • Weight: 252.6 lb (a STUNNING new low)
